Vegan Sushi
 
Ingredients

4 sheets of Nori
2 cups brown rice, cooked
1 cup tofu, baked and sliced in matchsticks
1 carrot, peeled and sliced in matchsticks
3 tablespoons miso
3 tablespoons spring onion, diced
1/2 avocado, diced
2 tablespoons rice wine vinegar (or to taste)
2 tablespoons soy sauce (organic & to taste)
pickled ginger
wasabi

Instructions

Add the miso and rice wine vinegar to the brown rice and sit aside. Lay the nori flat, and make a horizontal mound with the rice running the length of the nori, leave a couple of inches on the side. Fill with tofu, carrot, spring onion and avocado. Roll up the sheet by using your fingers to continuously push the seaweed towards the filling until you have a tight roll. Wet ends to seal and cut with a serrated knife. Serve with soy sauce, pickled ginger and wasabi.

Use just about any topping you can think of.
