Quinoa and Squash Cakes
 
Ingredients

1 cup quinoa (cooked)
1 cup squash, shredded
1 small onion, minced
1 clove garlic, minced
1/2 cup mushrooms, chopped
1/4 cup sunflower seeds
1 tablespoon parsley, chopped
2 teaspoons fresh thyme
2 eggs
1/4 cup bread crumbs
salt and pepper to taste
2 tablespoons oil

Instructions

Saute squash, onion, garlic and mushrooms over low to medium heat for about 8 minutes or until tender. Cool. Mix all of the ingredients together and form into patties. Refrigerate patties for 20 minutes. In a large frying pan, heat enough oil to saute patties. Cook until crispy and brown.
