Potato Leek Curry
 
Ingredients

1 red onion, chopped
5 cloves garlic, minced
2 teaspoons ginger, grated
3 medium potatoes, diced small
2 leeks, chopped
1 teaspoon curry powder (or to taste)
1/2 teaspoon nutmeg
1/2 teaspoon turmeric
2 teaspoons coriander seed, ground
1 teaspoons cumin
1 can coconut milk
2 tablespoons fresh cilantro or thai basil, chopped
2 tablespoons oil
1 teaspoon sriracha (optional)
salt and pepper to taste

Instructions

Saute onion, garlic, ginger, potato and leek on low heat till soft and brown. Add the nutmeg, turmeric, coriander seed, cumin and sriracha. Saute for another 2 minutes. Season. Add coconut milk and simmer for 10 minutes. Toss with cilantro or Thai basil.

Serve over noodles, brown rice or potatoes.

Variation: This is extremely delicious when you substitute sweet potato, pumpkin or butternut squash for the potatoes.
