Instructions Saute onion, garlic, ginger, potato and leek on low heat till soft and brown. Add the nutmeg, turmeric, coriander seed, cumin and sriracha. Saute for another 2 minutes. Season. Add coconut milk and simmer for 10 minutes. Toss with cilantro or Thai basil. Serve over noodles, brown rice or potatoes. Variation: This is extremely delicious when you substitute sweet potato, pumpkin or butternut squash for the potatoes. |
