Moroccan Sweet Potato Tagine
 
Ingredients

2 tablespoons oil
1 red onion, chopped
1 eggplant, chopped
3 medium sweet potatoes, chopped
1 red pepper, chopped
1 can artichoke hearts, drained
4 tomatoes, chopped (or 1 can tomatoes, drained)
1 tablespoon tomato paste
1 teaspoon cumin
1/2 teaspoon turmeric
1 teaspoon cinnamon
juice of lemon
1/4 cup dried raisin or apricots (or both!)
salt and pepper to taste

Instructions

Chop eggplant, sprinkle with salt and place in drainer for 10 minutes and rinse thoroughly. Saute onion, sweet potato, eggplant, red pepper in pan on medium heat until eggplant is soft. Add tomatoes, paste, lime juice and remaining seasonings to pot. Add 1 cup water and bring to simmer, add in dried fruit and simmer until sauce is thick, about 25 minutes.

Cook in a traditional Moroccan tagine in you are lucky enough to have one.
