Type of Recipe
In a large soup pot, saute onion and garlic for 5 minutes over medium-low heat. Add lentils and stir for a minute or two. Add carrots, celery and mushrooms. Stir for another minute or two. Add vegetable stock, salt and pepper. Cover and simmer for about 25 minutes or until lentils are tender. Add water if needed. Add fresh herbs prior to serving.
