Instructions Rinse the lentils and simmer in enough water to cover for about 25-30 minutes or done. Drain and reserve. Saute the onion for 2 minutes then add the garlic and the vegetables. Cook for another 5 minutes and add the can of tomatoes, tomato paste. Season and bring to a slow boil. Reduce heat, add lentils and fresh herbs. Simmer until the lentils are warm. This can be served on pasta or spaghetti squash for a cleanse friendly recipe. |
