Lentil Spaghetti
 
Ingredients

10 ounces lentils
3 cloves garlic, chopped
1 onion, chopped
1 cup vegetables, chopped (mushroom, carrot, squash, eggplant)
14.5 ounce can of tomatoes, diced
2 tablespoon tomato puree
2 tablespoons oil
2 tablespoons fresh herbs,(basil,oregano,parsley)
salt and pepper to taste

For a Mediterranean flavor you can sprinkle in some cinnamon.

Instructions

Rinse the lentils and simmer in enough water to cover for about 25-30 minutes or done. Drain and reserve.

Saute the onion for 2 minutes then add the garlic and the vegetables. Cook for another 5 minutes and add the can of tomatoes, tomato paste. Season and bring to a slow boil. Reduce heat, add lentils and fresh herbs. Simmer until the lentils are warm.

This can be served on pasta or spaghetti squash for a cleanse friendly recipe.
