2 cups fresh corn (can use frozen) 2 cups peas 1 small red pepper, diced 1 small red onion, diced 1/2 cup apple cider vinegar 1/4 cup olive oil 1 tablespoon honey 1 teaspoon fresh thyme or parsley salt and pepper to taste
