Corn, Bean and Avocado Salad
 
Ingredients

2 cups corn (4 ears of corn)
1-15 ounce can of beans, rinsed (black beans, black-eyed peas, garbanzo)
1 1/2 cup chopped tomato
2 ripe avocados, peeled and diced
1/2 cup yogurt, goat, feta cheese (optional)
juice of lime
2 tablespoons oil and vinegar
chopped fresh herbs like cilantro, basil, oregano
salt and pepper to taste

Mix ingredients in large bowl and enjoy!

Warning: grilled corn makes this very addictive.
