Burdock Root Detox Soup
 
Ingredients

6 cups coconut water
2 carrots, peeled and chopped
1 cup shitake mushrooms
2 burdock roots, peeled & chopped
1 tablespoon freshly ground ginger
2 cloves of garlic, chopped
2 tablespoons miso (or more to taste)
salt and pepper to taste
cayenne pepper to taste
1 tablespoon fresh cilantro, chopped
1 tablespoon fresh parsley, chopped
green onion to garnish

Instructions

Combine all of the ingredients except the parsley, cilantro and green onion. Season to taste. Simmer on low heat for 45 minutes or until done. Garnish with remaining ingredients.
