Made when soybean curds are pressed into cakes of tofu. Always buy organic to avoid GMOs. Several types are available: baked, extra firm, firm and silken. Mild in flavor and easily absorbs flavor from sauces. Known as bean curd in Asian dishes. Once opened, store in the refrigerator in an airtight container, covered in cold water for up to 3 days.
Use firm tofu for stir-fries, fillings, soup, salads, virtually anything. Use silken tofu for its creamy, custard texture in cream based items and desserts. |
